So, what are you having for dinner today. My partner is visiting her parents so I can/must cook for myself today but I can't decide...

Anyone got some nice vegetarian recipies?

Go to the phone and dial "INDIAN VEGETARIAN FOOD" Hummus is good appetizer, choose a dish with 5 different main meals, a good Spa to drink with that and for dessert vanilla icecream with chocolate topping on it. Then send the bill to???????

Sorry. It's a holiday weekend in the States, and will be a meat fest. BBQ three days in a row, weather permitting. In your honor, I will grill some fresh asparagus, though.

Seriously, how about making a pot of vegetarian ragu? You could have it hot today, and cold on some nice bread tomrrow.

We had grouper (bought at a reasonable price in Alligator Point last year) with a mozzarella, tomato, lettuce (from the garden), basil (ditto) salad. Yum. Tomorrow is the day for meet - some friends coming over, Nathan's hot dogs, grilled, with chips and salsa! Not terribly Southern, I know...

Throwing a couple racks of nice pork ribs on the grill today, maybe a beercan chicken ... i'll throw some parsley around for a veggie :D

Skinless chicken breasts for us tonight. Roasted in the oven with lots of garlic, olive oil and corriander.

Then frozen vanilla yogurt and raspberry sorbet.

Probably vegetarian lasagna. I really should consult my vegetarian cookbooks one of these days for a new recipe, though. This one's getting old!

It turned out to be diced chicken when I opened the packet so I've put it in a casserole dish with oil, garlic, pepper, tomatoes, courgettes and onions and am cooking it in the oven now. I'm starving. :)

but this is one of my favorite meals and simple to make.

Pasta & Tomatoes
Heat a little olive oil in a saute pan.
Add about 2 cloves of chopped garlic. (and a couple of scallions if you want)
Cook until brown.
Add 1/2 cup white wine and reduce by 1/2 (cook it down)
Add 1/4 cup lemon juice and a chopped tomato.
Cook for about 5 minutes.

Mix with cooked pasta (fettucini, angel hair). Add grated fresh parmesan cheese & fresh basil.
Also low calorie. :)

Mmmm, I just made this recipe for the first time tonight, and it's delicious! You'll need a lot of time for it, but it's worth trying if you've got the time.

Sweet and Sour Mixed Bean Hot Pot

Ingredients
Serves 6
1 pound unpeeled potatoes
1 tablespoon olive oil
14-ounce can lima beans
14-ounce can flageolet beans (I used pinto beans -- use any combo of beans you have in the pantry.)
14-ounce can chickpeas
6 ounces green beans, chopped and blanched
8 ounces shallots, sliced and blanched (I used white pearl onions)
8 ounces mushrooms, sliced
1 tablespoon each chopped fresh thyme and marjoram leaves
salt and freshly ground black pepper
sprigs of fresh rosemary, to garnish

Sauce:
3 tablespoons butter
1/3 cup whole-wheat flour
1 1/4 cup passata or tomato sauce
2/3 cup unsweetened apple juice
1/4 cup light brown sugar, ketchup, dry cooking sherry, cider vinegar, and light soy sauce

Directions:
1. Prepare vegetables (blanch green beans and shallots, slice mushrooms) and mix sauce in a large pot. Slice potatoes thin (half centimeter to 3/4 centimeter is good) and parboil potato slices for 4 minutes. Drain potatoes thoroughly and toss them in the olive oil so that they are lightly covered. Preheat oven to 400 degrees F.

2. Heat the sauce gently, whisking constantly, until the sauce comes to a boil and thickens. Summer gently for 3 minutes, stirring.

3. Rinse and drain the beans and chickpeas and add to the sauce with all the remaining ingredients except the herb garnish (rosemary). Mix well.

4. Spoon the bean mixture into a casserole dish (I used a 9 in. x 13 in. dish with the above proportions and it fit perfectly!)

5. Arrange the potato slices over the top of the bean mixture in the dish, overlapping them slightly and completely covering the bean mixture.

6. Cover the casserole with foil and bake for about 1 hour, until the potatoes are cooked and tender. Removed the foil for the last 20 minutes of the cooking time, to lightly brown the potatoes. Serve garnished with fresh herb sprigs.

Enjoy! It's fantastic :)

Oh, and if you substitute a soy- or veggie-based "butter" for the butter, you'd have a completely vegan dinner!

Janis, I miss Nathan hot dogs - they are so hard to find here in Michigan. Have you ever had the popular east coast sabrett's? those are the best, and untouchable.

I remember my first time having a Nathan's hot dog at Coney Island - I was about 6 or so. So many people....so much mustard and ketchup on the sidewalks LOL

My new favorite meal is Tomato Provolone Soup.

Put cubes of Provolone in the bottom of your soup bowl.
Make Campbells Cream of Tomato Soup with all Milk and no water.
When soup is piping hot, pour over the cheese cubes and enjoy.

I do that with Campbell's Tomato Soup and mozzarella cheese.....a little shake of oregano and basil and you got yourself a hot cup of pizza....throw in a couple of saltines for crust and enjoy!

mmmmm that sounds deliciousssssss! nice to see some vegetarian recipes appearing here for us vegetable people...

As for myself, after waiting 3 days for my avocados to ripen (dum de dum... la la la...) the finally have (yay!) so i am making an avocado and apple salad with diced cheese and a dressing of olive oil, lemon juice and freshly ground black pepper for lunch at work tomorrow.... ideal for this hot weather

All these recipes are making me drool, and I'm not even a vegetarian! Can't wait till dinnertime...going to an eclectic buffet....they have this dish that I love called a "Spinach Marie," which is basically scrambled eggs mixed with spinach with a cheese-and-crumb crust on top. Yum!

I baked something today! With the emphasys on "something". No idea what it is. Kind of somewhere between a giant muffin, a bread and a cake. I ran out of flour so I filled it up with cakemix. And I put prunes in it and lemmonzest for that fruity je ne sais quoi. It is indeed a je ne sais qoui... The dough tasted delicious though. I am very curious what the endproduct will be like. I'll take it to work tomorrow. If my collegue won't drop dead on the spot it's probably safe to eat. :confused:

My boyfriend and I went nuts on KFC Big Crunch burgers for lunch *oink* so I better eat healthier for supper.

Tonight it will be a big plate of tossed salad, and chunks of canned white albacore tuna on the side.

if you're ever in the mood for a good soup ( and who isn't,lol)
try this one
roasted veggie soup
roast up, on the grill or the inside grill if you like red bell peppers, some red ( or white) onions and some tomatoes (whatever kind you like tho rome seem to taste sweetest
boil up some vegetarian stock and a clove or two of garlic ( or if you like you can roast the garlic too)
peel off any blackening on the veggies and toss them in the stock, let simmer for about 20 mins
THEN with your average hand mixer or hand blender( if you have one) blend them all together till just about smooth...about 5 mins before serving blend in just about 2 tablespoons of soy milk, or if you prefer, cream.
Serve with your favorite bread

Irish Beth, we do that, but with cheddar cheese and Campbell's tomato soup. Yum - absolutely delicious!
To think I went all those years eating Campbell's tomato soup without the cheese... what a waste!

Well....being home alone at the moment, it tends to be "what do you want on a bun for supper?" Yes, it gets old, but it does fill the space.

I love Campbell's Tomato soup with a big dollop of cottage cheese in it, and a little sugar while making the soup...yum...of course, I like sugar on tomatoes, but if you don't, the soup is still great with the cottage cheese in it...the curds are fun to eat, and face it, how often do you get to chew soup?

scallop lovers try this one.. I did this for a dinner party last week and these tasty little morsels vanished with the quickness.


1lb Sea Scallops.. (big ones, about the size of golfballs)
1 cup Panko breadcrumbs
1/2 cup Asiago or Parmessan Cheese
Salt and pepper.
1 lemon
Olive Oil
Optional : fresh rosemary sprigs

Wash the scallops and pat dry with paper towels.. Make sure you remove the little muscle on the side of each scallop!

coat the bottom of a shallow dish with olive oil and roll each scallop in the oil to lightly coat.

Mix the panko and cheese together and season with salt and pepper to taste. Roll each lightly oiled scallop in the mixture and place on a
small dish. Press the mixture into the scallop. Refrigerate the scallops for 30 minutes to *set* the breadcrumb coating.


Prepare a grill or grill pan for high heat direct cooking. Oil the grill grate and spray or lightly dab each scallop with oil... place them on the grill grate or grill pan and sear the first side for approx 2-3 minutes.. Gently flip and sear the second side until the scallop becomes opaque. Serve at once with a little drizzle of lemon juice.

Alternate : Skewer each scallop on a sprig of Rosemary (pull about half the leaves off and use the stem as a skewer.. Fantastic on the grill!)

Cheddar-Swiss Strata

Prep Time: 15 min. - Bake Time: 40 min. - Chill Time: 24 hr.

Ingredients:

6 cups French bread OR Italian bread cut into cubes
1 can (10 3/4 oz.) Campbell's® Condensed Cheddar Cheese Soup
1 cup milk
4 eggs, beaten
1 1/2 cups shredded Swiss cheese


Directions:
ARRANGE bread cubes in greased 2-qt. shallow baking dish. Mix soup, milk, eggs and cheese. Pour over bread. Cover and refrigerate overnight. Uncover.
BAKE at 350°F. 40 min. or until knife inserted near center comes out clean. Serves 6. Cubed ham, shredded chicken or browned Italian sausage can also be added to this dish.

No fair Redjack, talking about Scallops when I have none in the house. Scallops are probably my favourite of all the sea foods.

A quick and easy appetizer is to wrap a Scallop with half a strip of bacon fastened with a toothpick, then broil on each side until golden.

Mmm mmm mmm! The cholesterol alone might kill you, but you'll die happy. :)

This weekend they are opening a new food store in the mall next door (Savory's), including an in-house fish counter.

Me beady li'l eyes will be scanning for fresh scallops you can be sure!
