Ahh... just got through with lunch....... and my tummy is happy.

Since the cool weather has now come upon us... yesterday I decided to go through my mother's old recipes and make some soup.

I came across my feel-good childhood food of Hungarian Beef Soup (husleves ... "hoosh levesh") and whipped me up a pot. So I thought I'd share. It's not that hard to make .... cause I'm certainly no Martha Stewart!!

Hungarian Beef Soup (Husleves)
2 lb Beef chuck
5 qt cold water
2 Parsnips, peeled (or Turnips... my favorite)
3 Parsley root and greens
6 whole carrots, cleaned
3 Potatos, peeled
3 med Onions
3 tsp Salt
1/2 tsp Black peppercorns
6 Whole cloves
3 ribs of celery

Sear the meat in pot to give it some flavor. Cover with water. Let it come to a boil and skim the foam off.
Add the salt, pepper corns, and let simmer for about an hour. Stick 2 cloves into each onion.
Add the carrots, celery, parsley root and greens, parsnips (I like turnips), and onions.
(I personally am not a fan of the clove, so I skip it!)

Cover and simmer for about 2 hours. Add potatos in the last hour of cooking. Serve strained soup broth with noodles.
Serve meat and vegetables with a Sour Cream and Horse-Radish sauce. (My mother used to serve it with
sour cream and horseradish sauce, but I don’t bother with that for myself.) Some bread and butter and enjoy.

You can eat this in two courses if you like. First, I have the soup with some egg noodles.
Then the meat/vegetables as a second course.

MMMmmmm…. My favorite cold weather meal.... I'm happy now.

Here's a scrumptious, meatless recipe that I'll be preparing tonight:

COTTAGE CHEESE MEATBALLS

1 Cup Cottage Cheese
1/2 Cup Wheat Germ
1/2 Cup Bread Crumbs
1 Cup Ground Pecans
3 Eggs (or 6 egg whites)
1 Medium Onion, minced

Combine all ingredients. Form into balls (18). Place in pan, cover with spaghetti sauce. Bake at 350 degrees for one hour. Serve over cooked spaghetti noodles.

Can you smell my pot of bean soup? Mmmmm Now I need to get some eggs to make the cornbread. I've been running in all day from the garage sale to stir the pot and take a taste now and then.

Cool, crisp weather, and I have a pot of bean soup on the stove. Life is good.

Húsleves... mmmmmmmmmmmmmmmmmmmmmm... *drool*
With homemade csipetke (kind of like noodles for in the soup)... mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

I have mustard? I could make a soup! It's cheaper to eat out when you are a single.... usually. If I have a dinner party it usually costs at least two hundred dollars for everything that should be considered supplies. And I never have to clean the kitchen..... I just have it dusted!

That sounds good, Ginny... I was thinking of making some meatballs just the other day... guess I'll give these a try maybe this week.

I was looking for the meat too, but since I'm vegetarian was delighted to find it's a recipe I can make myself, so I've wrotten it down.

Thanks for subliminally brainwashing me again, Mary. I was going to make meatballs over pasta for supper but I am just too wiped from this lingering head cold so I'll make Sloppy Joes instead. After two weeks of this I’m all souped out. Man cannot live by liquids alone!

dee, after a years worth of liquids alone, i can say that though man/woman can live on liquids alone, it certainly is not easy or fun. ;)

You have a point Hoops, so I'll rephrase that. This human person cannot live by liquids alone for more than two weeks and not feel like leaping. That said, the Sloppy Joes were yum. Now bring me a big ole honkin’ large pizza! :p

dee, did you send me your cold? just kiddin. tonight i had soup and popcorn. it's been a long time since i had soup after eating it daily for a year...it was pretty good. i've been stuffing my body with vitamins and herbs and i feel better already...even made the 3 mile walk to my therapist. hoping this is a positive trend :)
