View Full Version : BBQ Sauce
Having just watched the two final auction videos (again, THANKS Oak!) and seeing the purchase of the secret sauce recipe, made me wonder if it was a sweet sauce or not. I have this ridiculous aversion to anything sweet being combined with savory stuff so just wondered. I like my bbq sauce relatively hot and tangy..like with a vinegar or mustard type taste.
And what of the rest of you? How do you like your bbq sauce?

Mild and well smokey BBQ flavour :) We vegans can still put Quorn, veggie or mushroom burgers with it :p
To be honest I am not that fond of BBQ sauce. It was a good sauce and all. But I have tasted the ribs au naturel (well, they were covered in yummi herbs and all) And those were even better. I hope you will all still love me now that I came out as non-saucy BBQ person :o
So... just some sauce (preferably mayonaise) on my fries and that's it. Now, a good dressing on a salad is a different story...

Eva, I LOVE.... not mayonnaise, but..... CHEAP salad cream on my chips!!!!! I can no longer have that though, because of the free-range egg issue, although Hellmans Mayonnaise is now free range, and I suppose with abit more vinegar in it, it would pass as the cheap salad cream I love so much on my chips!!!! Dunno why, but go figure!!!!! :D

I make a very simple bbq sauce with brown sugar, catsup, a few assorted herbs and loaded with garlic...quite sweet and pungent, great on chicken wings, pulled pork. Simple, because we're both on a low salt diet.
I love black pepper and horseradish (WAsabi, yeah!!!), but those are taboo for Marcia, so I never cook with them, just add afterward...but not to bbq sauce.
Mmmmmmmm... garlic...

My boyfriend makes a very good sauce for ribs. I couldn't tell you what he puts in it tho.

Hot and smoky. Famous Dave's "Devil's Spit" is pretty close.
Okay, now I can tell you what Jimmy puts in his rib sauce.
Molasses
Dry mustard
Honey
Garlic
Cider Vinegar
We had some for supper tonight. Yum!
Sounds wonderful, Dee...a true KISS bbq sauce always tastes better to me than one with a thousand things fighting to be tasted.
Sweet, smoky, garlicky, and a touch of mustard and vinegar for pique...oooh, yeah.;)

Sauces are like people, every one is different.. I prefer three stage flavors personally, more complicated to execute, but the reward is worth it imo. I use marinades, then rubs, and then finishing sauces for most things. The sauce that Janis liked combines what i consider the best of Kansas City style sauces and adds flavors of tex-mex. Combined with the dry rub on the ribs i get that three stage, very complex flavor that had folks talking at the picnic.
The ingredients I posted that Jimmy used on the ribs yesterday are what I would call "mercy for me" ingredients. If he were cooking only for himself I promise you there would be fat hotter ingredients involved. But because he knows I wouldn't be able to eat them he just adds one of his trillion homemade hot sauces to his meal after cooking.
Absolutely, Ben...but one really has to know what one is doing, as you obviously do.
I was referring to a d.i.y. sauce, quick and dirty, that one can slap on, even in the microwave (:::gasp:::)...yes, I do chickenwings in a casserole in the zapper and they come out delicious (serve over rice or noodles). :eek:
My other consideration is Marcia's dietary limitations on pepper of any kind...I love the stuff, myself, and will do a seperate batch for me, sometimes. We both have to watch the salt intake, too.
I am content to enjoy other people's efforts at bbq, done on a grill, with lots of skill and stuff...and I DO enjoy yours, Ben!...for myself, I'm afraid I'll have to settle for KISS.;)

Funny aside note, At a couple of points during the picnic Janis asked if i had more sauce for the Pulled Pork, Brisket, etc.. I knew that Agnes and I had carefully packed all our supplies, going through a checklist as we did so, but i couldn't find the stuff i needed to make more sauce.. Greg's mom loaned us some fixings that i was able to make a quick sauce out of, but it wasn't until the massive cleanup of the area later that night that i found the bag of ingredients we had carefully packed.. <sigh>
Still think i know what i'm doing Bat?? lol
Ben - Little doubt you are a superb cook. Given that a meat has been prepared with a good rub that is generally enough for me!..no sauce needed.
BTW I, myself, really can't make a very good rub or a very complicated bbq sauce.

Now I know this is kind of soon but this is the time to start thinking about it....Well for the next picnic....:) REDJACK, We all would like to see you And your assistants reduce the amount of things you needed to cook so you will have time to visit us all and MUSIKFEST!!!! Maybe just do BBQ Ribs & Wings???.... We can provide you with an empty kitchen, stove and oven and refrigerator and plenty of outdoor grills.... We have a couple 10X 10' tents and picnic tables, plenty of chairs and lots of shade and trees... A tent for soda/beer kegs, and cooking... A tent for viewing dvds and a tent for just chatting....Other goodies could be provided locally.... Like a couple 6' long Blimpie Sandwiches, and of course sausage, pepper and onion sandwiches and some other great festival foods to delight and destoy (Our area of Pa. is well known for great food)... After the way Janis was recieved here at Musikfest this year she so deserves and will be asked back to perform in one of the feature venues.... which range in size from 500 (Moravian hall) to 15,000 (Riverplatz) The area offers a great many antique and book stores, farmers markets and 300 performing acts over a period of 10 days, most free.... So Friday people could wander Musikfest (7 miles away), Saturday the picnic and Sunday Local covered Bridge tour, Dorney Park Amusement and Water) or Musikfest... Based on the turnout of the last picnic we have plenty of space... lots of shade trees, a workable stage for performances and the auction..., an indoor retreat if needed, off street parking... Oh another thing... We are near the Lehigh Valley International Airport... Just 12 miles... just 70 miles from Manhatten... 60 miles from Philadelphia... 110 miles from Atlantic City for those wanting to take excursions... A sports bar for those wanting mixed drinks within a block....
Now if people really wanted to make it special... Though there is hotel space available locally but for those more dareing they might rather then spending $80 or $120 bucks a night for motel rooms... Get together and purchase camping tents and air mattress's far less costly and have a rudie campout on our property... Those and a sleeping bag and then party would go on and on and on.... We can privide dvd and cd players for out of doors and yes there is even an area that would be peaceful and quiet for those wanting to sleep... Oh and plenty of bathroom and toilets available....
So REDJACK, what do you think? I will post a few photos in the near future...

Sounds good right now.. but honestly far too early for me to even think about doing another one of these things for a long time. And the only way i'd do another one is if I can get my same support crew again. I'd also like to do the next one at a place where Dee can attend.

randy i think it's a great idea....there can always be a local picnic too.....just a thought...
i do think that canada would be a great place to have one of these.....or wherever.....
let 2010 bring whatever it may....that's what i have to say.

You have to have a dream before you can make it a reality.
Great ideas! I'd like to see something like this happen again so more of us could attend. And thanks for thinking of those of us on the "camping budget."
