Dave and I have been eating Amish potato salad all week. I polished it off last night. I didn't make it myself -- our supermarket has a good deli.The only thing I did was sprinkle some basil on it. But it was delicious, so sweet it could qualify as desert. Yum.

Gotta remember to hit the grocery store later....:o

It is paprika David. Sweet Hungarian and not hot smoked Spanish.

I squidged you a load in an e-mail by the way. Stand back when you open it tho as food attachments have a habit of exploding all over the place.

I love potato salad and never make it, because no one would eat it here, but me. Yours looks divine!

An elderly friend makes it for me whenever I see her. She uses bacon and some of the drippings in hers! MMMMmmmmm

Will technologies ever allow us to send food over the Internet? How cool would that be? (If a tad messy.) The potato salad got a good rating, as did the salmon patties and the green Summer green peas served on the side. Bless you Green Giant (http://www.offthemark.com/greengiant/greengiant.htm)!

SALMON PATTIES

1 small can Wild Pacific Red Sockeye salmon
12 soda crackers, crushed
1 large egg
½ tsp lemon juice
1 tbsp fresh dill (or 1 tsp rubbed basil flakes)
salt and pepper optional

Combine all ingredients in a small mixing bowl and let stand 15 minutes.

Shape the salmon mixture into four patties.

Fry in a nonstick pan (oil optional) until golden brown on both sides.



* I actually fry mine dry since the oil in the salmon seems to be sufficient for cooking.
