I just made myself a delicious pot of houmous :p
about twenty years ago I made a mean pot of the stuff, but when I tried again last year it tasted so bland I threw it away.
then a few days ago I posted a thread on outeverywhere.com (a gay and lesbian forum I'm on) asking for tips. One person suggested that I leave it 2 hours at least before tasting, as it often tastes dull until all the different tastes have blended in.
what a good tip... it's fab :) :) :)

David...here's my favorite Hummus recipe:
2 cups garbanzo beans (a.k.a. chick-peas)
juice from a whole lemon
3 to 4 cloves of garlic, minced
3/4 cup tahini
about 1 teaspoon salt dash of pepper
olive oil
soak two cups of beans overnight in four cups of water. Then boil them for about an hour the next day, and when they've cooled off just throw them in the blender with the other ingredients.
Hummus is about texture. If it's too thick, just add water and olive oil. If it's thin, dump in more tahini. If it sticks to the roof of your mouth, put more garbanzos in.

Tahini is a creamy-like substance made from sesame seeds...it can be used as a spread on pita bread and is used in a lot of vegetarian dishes. It's great for baking!
And...of course we are still getting married...I'l just do all the cooking..:rolleyes:

Don't worry then, David, I'll just bring my own. I can get them at perfect ripeness from the Greengrocer in Queensferry Street. He's never let me down yet. And it's worth paying that little bit more for good service :)

I have to say I hate tahini on its own, say with pitta bread or toast, as it sticks to the roof of my mouth- but as an ingredient in houmous- yay!
